The grapes are harvested exclusively by hand and vinified using traditional methods.
Aged a minimum of 18 months on laths.

To the eye: Salmon-pink color with rose-petal highlights. Very fine bubbles form a creamy cordon.

Nose: Fruity, with aromas of citrus fruit, orange zest, redcurrant, raspberry and vine peach. On aeration, greedy notes of English candy give it a lovely dimension.

Palate: Flavors of red fruit and freesia, and a finish again dominated by a thirst-quenching zesty note.

Grape varieties: Chardonnay, Chenin, Pinot Noir (Serve at 10°c.)

Pairings: To open a meal with a salad featuring smoked trout, or as a finale to a red fruit dessert.
